We were delighted to be able to celebrate coeliac awareness week last week. Did you know that all of our soups are gluten free? To celebrate we served up a delicious gluten free lunch, our tomato and basil soup with a gluten free oat loaf and a summer tomato salad. Check out the recipe for a quick and easy oat loaf which tastes almost identical to soda bread:
500g Natural yoghurt
1 Egg
350g Porridge Oats
2 TBSP Milk
1 tsp Salt
2 tsp Baking Soda
Pumpkin seeds (optional)
Preheat the oven to 180 degrees. In a bowl beat together the yoghurt, egg and milk. Add the baking soda and porridge oats and salt and combine to form a dough. Transfer to greased loaf tin and pop in the oven for approx 50 mins to one hour. Remove from the tin and place the loaf back in the oven fo 5 mins to crisp the crust.
Leave to cool for a few minutes before slicing. Enjoy with copious amounts of butter :)
