Method:

  • Hardest part is preparing the chicken.
  • You basically have to skin the chicken the, flatten it down the breast bone and disconnect the legs. Then secure with wooden skewers.
  • It's too hard to describe how to do it, so have a search online! Thank goodness for Google!!
  • Blend all of the pesto ingredients together.
  • Smear the chicken all over with the pesto.
  • Place on a try and chill for two hours.
  • You can cook it like this, uncovered, in a hot oven for 40mins or  with the spirit of the summer, BBQ it!
  • Will take 10-15mins each sine on a low-moderate heat.
  • Be warned, it will make a mess of your BBQ!
  • It's worth it though, chicken is kept moist and tender by the pesto marinate. Plus it tastes amazing!
  • Serve with paprika chips, salad and roasted cherry tomatoes.
